Soup recipes

My mum does a good one.  It's basically a small bag of frozen peas cooked in stock (instead of water) and with a wee bit white wine, some softened onions and seasoning.  She then purees the whole lot, adds a swirl of cream and a bit of freshly ground black pepper.  If she's having someoby over she wants to impress she puts a couple of scallops on the bottom of the plate before serving.  And she uses her posh china....
