Cooking for a Vegetarian

I am cooking a dinner party and i have two vegetarian friends coming. I don't want to give them my usual couscous stuffed peppers, which are quite nice but they have had them at least 4 times.  Does anyone have any other vegetarian recipes so i can give them a lovely meal, one that possibly all the other guests might enjoy as well? - please help me out here - thanks

There's a dead easy recipe in the food and drink section under the 'Meals in Minutes' section.  It's basically penne with good quality pesto (the chilled stuff rather than the jars) on a bed of rocket with grilled goats cheese and toasted pine nuts on top. It takes no time at all and actually looks impressive!
